Happy Friday! Now that December is here and in full swing, I am truly loving all of the holiday festivities and winter rituals. One of my favorite things to do when it’s cold outside is to curl up with a good book, a cozy blanket and some hot cocoa. Today I’m sharing a recipe that I use and love because it’s relatively light with no added sugar, aside from the chocolate. Serve this on a snowy day or on Christmas morning while everyone is opening gifts!
INGREDIENTS (makes 4 servings)
4 c. whole milk
6 oz. bittersweet chocolate (these are the best)
1/4 tsp. vanilla extract
1/4 tsp. peppermint extract
1/8 tsp. kosher salt
whipped cream
crushed soft peppermints (for garnish)
extra bittersweet chocolate (for garnish)
mini marshmallows (for garnish)
INSTRUCTIONS
Warm the milk in a medium saucepan over medium heat. Once the milk starts steaming slightly, add the chocolate and stir frequently until almost melted. Stir in the vanilla extract, peppermint extract and salt and let simmer until the chocolate is completely melted and the mixture is in solution. Transfer to mugs, top with whipped cream, and garnish with crushed peppermint, bittersweet chocolate shavings and mini marshmallows. To cut down on sugar a little bit, use unsweetened whipped cream!
