Happy Labor Day! This long weekend has been one of the best of the summer! Spending this holiday on Cape Cod could not be more quintessential New England summertime – and I love it! Even though I’m not really a meat eater, I absolutely love a homemade dinner of freshly caught seafood. We spent the morning deep sea fishing, and although we’ve had better luck during other fishing adventures, we still caught a black sea bass, which we cooked up on the grill later that day.
We also picked up a lobster and some scallops from the local fish mart. The only time I truly enjoy seafood is when I know it has just been caught and it’s as fresh as possible. I hate to admit it, but I don’t really like lobster… however, grilled scallops are my favorite. We steamed and chilled the lobster, then split it and grilled it. I had never seen a lobster cooked this way, and the verdict was very positive.

There is nothing better in the summer than grilled corn. We picked up some organic, local corn from Cape Abilities earlier in the day specifically to eat with our seafood, and it was so fresh and so tasty. Grilling it is so simple. Just pull back the husk (but don’t remove!), remove all the silk, and cover the corn again. Soak in salt water for about 10 minutes, then throw it on the grill. You’ll need to turn the ears every couple of minutes, but it will be perfectly done in about 15 minutes. Make sure the kernels are plump and tender.
The fish and scallops were just cooked with a little olive oil, salt, pepper and lemon. The simpler, the better in my book!
