Who doesn’t love cake?! I sure do! There’s nothing better than a freshly baked homemade cake, colorfully decorated and topped with candles. I love everything about the process of baking a cake. From carefully measuring ingredients to the way the apartment warms with the scent of treats baking, it always reminds me of one of my favorite childhood pastimes of whipping up treats (for every occasion!) with my mom and sister.

Ever since cake pops started to become more popular recently, I’ve always wondered how they were made. I followed these directions, and surprisingly, they were pretty easy! They are essentially just a baked cake crumbled up and mixed together with frosting and then dipped in chocolate (I had never really thought about it, but this kind of surprised me). I probably had way too much fun crumbling up the cake and rolling it into balls. I kind of felt like a kid playing in the sand, and it was quite therapeutic.

I used this basic vanilla cake recipe and my all time favorite frosting recipe to keep it all together, as well as some colored white chocolate melted down with a little butter and milk for the coating. You’ll also need some lollipop sticks and lots of fun decorating supplies like these and these! These cake pops were so easy (and that much more fun than regular cake!), so I have a feeling I’ll be making these a lot more often. Since the otherwise light and fluffy cake gets quite compacted and held together with frosting, these become super dense, super moist decadent treats – perfect for any special occasion!
