For a fun and satisfying snack, try whipping up these mini banana breads. Great for an on-the-go breakfast or a sweet afternoon treat, you really can’t go wrong. I used this banana muffin recipe but poured the batter into mini loaf pans instead of a muffin tin. The individual loafs are perfectly portioned and are easy to grab-and-go on your way out the door. The recipe is healthy too! Using only honey (or maple syrup) and as a sweetener and applesauce for extra moisture, this is one you can feel good about!

4 large scoops vanilla ice cream
1 cup whole milk (skim just doesn’t cut it here)
